How to make Chakli Spicy Crunchy Dish in Karnataka Style

This article is a recipe with three kinds of Chakli - a Karnataka Style dish. Chakli is a spicy, crunchy and crispy snack that everyone likes to have in the evenings. The Chakli is a Karnataka dish special on Ugathi.
If you had gone through the previous recipe of mine, you could have come to know about the special sweet of the Karnataka new year festival, the 'Ugadhi'. In this article, I give the brief details about the spicy and cruncy dish, the Chakli in Karnataka style. Chakli is a karnataka style dish which is very special on the day of Ugathi. Festival is the time when all the relatives and friends meet each other and together spend time in chatting, praying, decoring houses, cooking and finally enjoying by eating the dishes that they prepared. Sharing these dishes with all the neighbours and relatives gives the pleasure of the day. The Chakli is a very good snack that can be stored and used for many weeks. So not only on the day of Ugathi, Kannadians prepare this Chakli snack throughout the year.

At our house, we make this Chakli - Karnataka Style dish with three different recipe varieties. The first kind is the one with a combination of all flours. The next is made with Bhajani, mixture of all grains fried and then grind. The third kind of Chakli in karnataka style is made up of the ingredients, boiled moong dal and rice flour.
Ingredients for the Chakli - Karnataka Style Dish with different flours

Jowar Flour 3 Bowl
Rice Flour 3 Bowl
Besan( gram) Flour 2 Bowl
Maida 1 Bowl
Butter or Dalda ¾ cup
Ajwana (Owa) Seeds
White Til (Sesame) seeds
Turmeric powder
Chilli powder
Cumin powder
Salt and
Oil.
To make this Chakli - Karnataka Style dish, pre-planning is not required. This is because in all houses these flours will be available instantly at anytime.
Preparation Method for the Chakli - Karnataka Style Dish with different flours

1 Take a wide open big bowl and add all the flours and the above said ingredients except the butter and the oil in it.
2 For the Chaklis tobe crunchy, to this mixture melt the butter in a low flame and add it.
3 Now blend the dough by ading hot water to it.
4 After completely kneading the dough make small balls of Chaklis to the size of small lemons.
5 Uniformly pat it to give the shape of round or square pieces. You can do this with either plastic paper or planton leaf by applying oil on it. Or you can even do it with the chapathi press.
6 Then pour oil in a copper bottom tawa and heat it.
7 Now fry the chaklis on low fire.
8 You can then cool and preserve the Chaklis in a tightly closed container or serve the Chakli - Karnataka style dish hot.
Ingredients for the Chakli - Karnataka Style Dish with Bhajani

Rice 4 Bowl
Gram Dal 2 Bowl
Udid Dal 1 Bowl
Moong Dal ½ Bowl
Cumin Seeds 1 Table Spoon
Coriander Seeds 1 Table Spoon
1 kg of Bhajani Flour in redymade will contain all these above said ingredients in it.
Dalda or Butter 4 Table spoon
Ajwana (Owa) Seeds
White Til (Sesame) seeds
Turmeric powder
Chilli powder
Cumin powder
Salt and
Oil.
Preparation Method for the Chakli - Karnataka Style Dish with Bhajani

1 First of all roast all the dals, cumin seeds and the Coriander seeds one by one in medium flame.
2 Then take it to the grinding mill and make it into a flour. This is nothing but the bhajani flour which you can even purchase at Indian grocery shops in readymade.
3 Now take 4 bowls of water in a kadai or any vessel and boil it.
4 To this boiling water add the butter, white til (sesame seeds), turmeric powder, chilli powder, ajawana (ajwain) and salt to taste.
5 Nextly, remove the vessel from the stove and add 4 cups of Bhajani flour.
6 Now blend this mixture with a help of a spoon or ulanthane (Motthu).
7 Let this kneaded dough aside for 1 to 2 hours.
8 After completely kneading the dough make small balls of Chaklis to the size of small lemons.
9 Uniformly pat it to give the shape of round/ spiral or square pieces. You can do this with either plastic paper or planton leaf by applying oil on it. Or you can even do it with the chapathi press.
10 Now heat oil in a copper botton tawa.
11 Then fry 4 to 6 chaklis at a time in a hot oil on low flame.
12 Finally you can either Cool and store in a tightly closed container or serve the Chakli - Karnataka style dish hot.
Ingredients for the Chakli - Karnataka Style Dish With cooked moong dal and rice flour

Moong Dal (Cooked) 1 Bowls
Rice Flour 2 to 3 cups
Dalda or Butter ½ cup
Ajwana (Owa) Seeds
White Til (Sesame) seeds
Turmeric powder
Chilli powder
Cumin powder
Salt and
Oil.
Preparation Method for the Chakli - Karnataka Style Dish With cooked moong dal and rice flour
1 Cook moong dal in pressure cooker for 5 minutes after getting maximum pressure.
2 Take a wide open shallow vessel and put the rice flour in it.
3 Add the Ajwana(Owa) seeds , Til, turmeric powder, chilli powder, salt and hot melted dalda or butter to it.
4 Pour hot water to it and mix with a ulanthane (Motthu) or spoon.
5 Now shift the hot cooked moong dal in the vessel containing the dough and mix to get the desired consistency.
6 After completely kneading the dough make small balls of Chaklis to the size of small lemons.
7 Uniformly pat it to give the shape of round/ spiral or square pieces. You can do this with either plastic paper or plankton leaf by applying oil on it. Or you can even do it with the chapathi press.
8 Now heat oil in a copper botton tawa.
9 Then Prepare chaklis by frying it in hot oil on low fire.
12 At the end Cool and store it in a tightly closed container or you can even serve the Chakli - Karnataka style dish hot.
